FRENCH KISS
adapted from Oliver's at the Mayflower Park Hotel, Seattle, WA, USA
30 ml Belvedere vodka
1 TB Lillet Blanc
90 ml Pol Roger Champagne
Shake vodka and apéritif wine over ice. Strain into a champagne coupe. Slowly add champagne.
Garnish: orange twist
THE COLONEL’S BIG OPU
adapted from Trader Vic's Book of Food & Drink
30 ml Sipsmith Gin
30 ml Cointreau
Juice of half a lime
180 ml Freixenet Cava
Shake gin, liqueur, and juice over ice. Strain into a champagne coupe. Slowly add champagne.
Garnish: none
SHRUB ROYALE

1 splash fresh raspberry shrub
1 splash homemade crème de cassis
120 ml Martini & Rossi Prosecco
Build in a champagne flute.
Garnish: 3 fresh raspberries
STRAWBERRY BELLE

1 splash homemade strawberry liqueur
90 ml Pol Roger Champagne
